These are the perfect pancakes for Shrove Tuesday or any other pancake day!
You can serve them with lemon juice and sugar or golden syrup. Or any savoury fillings, in fact.
- 110g Gluten Free Flour Co plain flour blend
- 2 tbsp golden caster sugar
- Pinch salt
- 3 medium eggs
- 200ml milk
- 100ml water
- 40g melted butter
- 1 lemon
Place the flour, sugar and salt in a large mixing bowl and make a well in the centre. Crack the eggs into the centre and start whisking. Add the milk and water bit by bit until you have a light, thin batter.
Melt the butter and pour 2 tbsps into the batter. Use the rest to grease the frying pan.
Pour 2 tbsps of batter into the pan. Swirl it around to give a thin even coating. Turn when golden on one side. When cooked, place on a warm plate. Carry on cooking the pancakes until you have a stack.
Serve with lemon juice and more caster sugar.
