Apple Tray Bake


 This delicious Apple Tray Bake is just perfect for Autumn and so easy to make! The moist centre and crisp topping make a perfect combination and it can be enjoyed whatever time of day - served warm as a yummy dessert or as a perfect accompaniment to afternoon tea!

Preheat the oven to 180oC, Gas mark 4.

Grease and line a tin, approximately 15cm x 20cm.

Ingredients

  • 100g butter, softened
  • 80g light soft brown sugar
  • 2 eggs 
  • 80g Gluten Free Flour Co Plain Flour
  • 1½ tsp gluten free baking powder
  • 40g ground almonds
  • ½ tsp cinnamon/mixed spice
  • 1 apple, peeled, cored and finely chopped
  • 30g mixed dried fruit
  • 60g gluten-free muesli, oats or granola

      Method

       Cream the butter and sugar together.  Beat in the eggs, one by one.

      Sift in the flour and then add the baking powder and ground almonds.  

      Add the cinnamon/mixed spice.

      Now add the mixed dried fruit and the chopped apple.

      Sprinkle the muesli, oats or granola over the top.

      Bake in the oven for 30-35 minutes.

      Allow to cool in the tin for 5 minutes, then cool on a wire rack.
