Chocolate Chip muffins (Gluten and Dairy free)

Ingredients: 100g butter or dairy-free margarine 100g Gluten Free Flour Co Plain Flour Blend 80g ground almonds 30g polenta 80g golden caster sugar 1⁄2 tsp xanthan or guar gum 2 tsp gluten free baking powder 2 eggs 120ml milk or soya milk 100g Dark chocolate chips Muffin tin and 10 paper muffin cases Preheat the oven to 175°C/gas mark 4. Method: Melt the butter or margarine in a saucepan or the microwave and put to one side. Gluten and Dairy Free Breakfast Pancakes

Ingredients: 80g Gluten Free Flour Co Plain White Flour Blend 25g quinoa flakes 1 tblsp ground linseeds 1½ tsp gluten free baking powder 2 eggs, at room temperature 165 ml dairy free milk Pinch of salt 1 medium apple, or piece of sweet potato, grated  1 tbsp oil and a little more for cooking To serve: Tub of Greek yoghurt Fresh berries (eg strawberries and blueberries) Runny honey Griddle pan or large frying pan Method: In a mixing bowl, combine the flour with the quinoa flakes, linseeds, baking powder and salt.  Stir well to combine. Gluten Free Panforte Ingredients: 240 g whole almonds 100g walnuts 100g dried figs 150g candied peel 150g Gluten Free Flour Co plain flour blend 2 tblsp cocoa powder 1 tsp ground cinnamon ½ tsp ground nutmeg ½ tsp ground cloves ¼ tsp ground coriander ¼ tsp cayenne pepper 180g granulated sugar 180g runny honey Rice paper and baking parchment Preheat oven to 200ºC/Gas mark 6 Method: Line a 20cm springform cake tin with baking parchment, then a further circle of rice paper.
