Raspberry Muffins

  It's been a little while since I have done a recipe so I have been thinking about what would be a good one for summer time picnics, so I thought about the Raspberry Muffins.Then, of course, it has rained nearly constantly for the last few days, but it is still a great recipe when you are stuck indoors.  You can use other berries like blueberries or blackberries too if you prefer. The recipe uses our lovely gluten free plain flour mixed with some ground almonds for a delicious flavour. These freeze really well, too. Awesome extra things you can make with the bread mix!

  I've been experimenting with what else you can make with our lovely white bread mix. While it is super on it's own, I did fancy a change. So here are a quick and easy way of making pizza, a delicious crusty cheese loaf and a great tear and share olive bread. You could also try adding a little cayenne pepper or some chilli flakes in with the cheese in the cheese bread and adding some chopped rosemary to the olive bread if you like. Lemon Shortbread

Lemon Balm Shortbread I came across an old recipe for shortbread that contained rice flour, so I thought that baking gluten free shortbread might work quite well. It did! I have a large lemon balm plant in the front garden which has a gorgeous scent when you rub it between your fingers. I’ve used it before in a Madeira cake and I thought that it might add a lovely flavour to shortbread. I also discovered that, like many herbs, it has medicinal uses. It is calming and can be used to reduce stress (Kennedy et al 2004). Courgette Cake

This is a fantastic cake for the summer when there is a bit of a glut of courgettes from my allotment! It also feels reasonably healthy as it contains coconut oil, the amazing teff flour and, of course, courgettes! It is delicious and keeps really well too. This is one of our all-time favourite cakes. With a light, soft sponge and lemony, crunchy topping, it makes a delicious dessert or the perfect accompaniment to afternoon tea.
